Here is an important tip about using Butter Cream and Strawberries.

Do not layer the strawberries over the butter cream between layers of cake until the butter cream has air dried and pat dry the strawberries.

Once you cover your cake with fondant and do not do the above tip, the butter cream and strawberries start to melt through the fondant leaving you with a not so nice cake in the end. Boo to me. (she shakes her head) ;-)
